The Obsession Begins

Dave McCormack started cooking BBQ in 2014 out of a genuine obsession with what low-and-slow cooking can do to a piece of meat. By 2019 he had built a public-facing brand around it. In 2024 he incorporated Wilson's BBQ Ltd.

The Wilson's YouTube channel has built a following that stretches well beyond the UK. Honest, practical BBQ education. No shortcuts. The same approach underpins the classes, the tours, the consultancy and the trailer.

Alongside the classes and tours, Dave consults for restaurants and hospitality operators who want to add BBQ to their offering and need someone who understands both the food and the business. He holds the relevant food hygiene certificate and works with partner venues across the UK, including ProSmoke BBQ in Banbury and the SoCal BBQ Shop in Southampton where he teaches public classes.
